The Ultimate Bacon and Brie Sandwich

On this episode of The Hot Skillet, Chef Cristian Feher shows you how to make a bacon sandwich that takes him back to his high-school days. This particular recipe is an improvement on an already-superlative sandwich made by the mother of a high school friend while growing up in Toronto, Canada. “I remeber thinking, ‘oh my God’ are they actually going to eat that?” Recounts Chef Cristian, “They’d put it on these big keiser buns, dripping with bacon fat, melt processed cheese on it and squirt it with ketchup. The first time I bit into one of these things, I was like, wow! This is addictive. I knew it was bad for me, but I wanted more.”

So it was with this memory that this recipe was created. The processed cheddar was bumped for double-cream brie, and the ketchup can be replaced by a sauce made specifically for this sandwich, made with ketchup, molasses, and a little bit of srirachia for tinge of heat. The sauce is optional, of course, as this sandwich already packs huge flavor (and huge calories as well.) “But it’s worth having once or twice a year.” Comments Chef Cristian.

Yields: 4 sandwiches

Ingredients

  • 4 sesame seed buns
  • 1Lb of sliced double-smoked bacon
  • 1 onion, julienned
  • 1 tomato, sliced
  • fresh ground black pepper
  • double-cream brie cheese, rind peeled off

Instructions:

1. Cook the bacon and the onion together with some fresh ground pepper until the onions are golden in color.

2. Slice the tomato and put a few slices on the bottom of the bun.

3. Drop some chunks of brie in with the bacon and cook until cheese is well melted. Put the bacon and cheese mixture on a bun and enjoy! The Bacon Samich Sauce is optional (recipe below)

 

Bacon Samich Sauce

Ingredients:

  • 1 cup of ketchup
  • 2 tbsp of molasses
  • 1 tbsp of srirachia sauce

Instructions:

1. Mix together and keep in container with lid. It will keep for a long time in the fridge.
