Pressure Cooker Chicken Cacciatore

Chicken cacciatore is one of those heart-warming comfort foods in any Italian kitchen. It’s simply chicken, braised with vegetables and a tomato sauce. It’s a perfect dish to serve over pasta, rice or potatoes.

The sauce for this dish turned out so flavorful that we even ate is as a soup at the end!

Using a high-quality pressure cooker – like our Fissler Vitavit Edition Design 8 L pressure cooker – allowed us to cook this recipe for only 20 minutes and achieve a juicy, tender, fall-off-the-bone chicken that you would normally get with slow oven braising.

Ingredients for this recipe:

  • 5 chicken drumsticks, skinless
  • 1 cup chicken stock
  • 1 cup onion, diced
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1/2 cup fresh basil, chopped
  • 24 oz of Rao’s Tomato Sauce
  • Parmesan Cheese
  • Egg Papparedelle Noodles

Instructions:

  1. Cook the pappardelle noodles, drain, cool, mix with olive oil and set aside.
  2. Put the chicken stock, onions, chicken, celery, onions, basil, mushrooms and tomato sauce in the pressure cooker. Lock lid in place.
  3. Cook on high pressure for 20 minutes with quick pressure release at the end.
  4. Serve over pappardelle pasta or your favorite side. Enjoy!
