The Bacon Sandwich 2.0

Not long ago, I showed you how to make the ultimate bacon sandwich. But, because the universe is an ever-changing place with no such thing as an absolute, the ultimate bacon sandwich became obsolete, and the bacon “samich” 2.0 was created.

Like many great inventions, this sandwich came together out of necessity. I was watching Nashville with my wife, she said, “I’m really hungry.” And I said, “I’m hungry too.” So, I ran to the fridge, saw the bacon, saw the eggs, saw the croissants, and it all made sense. I think I actually heard Kevin Costner whisper, “If you make it, it will rock.” into my ear.

The Bacon “Samich” 2.0

Ingredients:

  • 1 Lb of bacon
  • 2 butter croissants
  • 6 fresh eggs
  • 2 slices of colby jack cheese
  • ketchup (optional)
  • 6 scallions, chopped
  • Salt and pepper to taste

Instructions:

  1. In the first skillet, cook your bacon to desired doneness – I like it soggy, my wife likes it crispy.
  2. Once your bacon starts rendering fat, pour some of that fat into the second skillet, and cook the scallions in it for 3 minutes. Then add the eggs, salt, and pepper and scramble.
  3. Cut your butter croissants in half and put a layer of eggs on the bottom piece.
  4. Top the eggs with a slice of cheese
  5. Top the cheese with bacon
  6. As a professional chef, I would never put ketchup on eggs, but Kevin Costner told me to do it, and it worked out!
