Baked Ice Cream Cappuccinos on Daytime Show (NBC)

In case you missed Chef Cristian’s cooking segment on the Daytime Show (NBC). Here it is!

 Yields: 4 servings

– 5 egg whites
– 1/2 cup of sugar (or more to taste)
– Vanilla ice cream
– 1 tsp of instant coffee crystals

– Ramekins
– Electric mixer

NOTE: In order to make really nice, stiff, meringue, you have make sure that the egg whites do not come in contact with any fat, oil, or grease, as this will prevent your whites from stiffening in to a meringue. It also helps to leave your eggs out at room temperature for an hour before preparing the meringue.


1. Separate the egg whites from the yolks. Discard the yolks and put the egg whites in to a bowl.

2. Add the sugar and coffee crystals to the egg whites and whip with an electric mixer for about 5 to 7 minutes until the meringue is stiff enough to form peaks. My test for doneness is flipping the bowl up-side-down. If the meringue stays in the bowl, it’s done!

3. Turn the broiler on in the oven.

4. Put some ice cream in some ramekins. Cover the ice cream with a bunch of meringue over top, and place under the broiler for a few seconds, just until the meringue browns. Remove from oven and enjoy right away.
