Traditionally, this dish would take several hours to cook on the stove top. In this time, the collagen, and tough muscle fibers of the beef shank will break down to yield a tender, juicy, and incredibly flavorful cut of meat.

But you don’t have to spend hours in the kitchen to have this satisfying dish. You can cook beef shanks to a tender point in as little as 45 minutes using the pressure cooker.

During the making of this video, we found that the organic grass fed beef shanks that we were using, were tougher than usual. So the actual cooking time took 1 hour and 15 minutes to yield a fork tender beef shank.
