How to Make Fresh Pasta

Chef Cristian Feher shows you how to make fresh pasta using a food processor and a pasta machine.

For this recipe, Cristian uses some fresh red pepper chimichurri to flavor the pasta. You can add all sorts of flavorings to fresh pasta, and that’s one of the advantages of making it yourself. We have provided the recipes below.

Red Pepper Chimichurri Recipe

A chimichurri is an Argentinian herb and olive oil mixture primarily used to season grilled meats. This versatile condiment can be used in many dishes and is easy to make if you have a food processor.

Ingredients:

  • 1 red bell pepper
  • 4 cloves of garlic, peeled
  • 1/2 cup of fresh parsley
  • 1/2 cup of fresh basil
  • 1 tsp of dried oregano
  • Salt and pepper to taste

Instructions:

  1. Put all ingredients in a food processor.
  2. Pulse for a few seconds until all items are blended together. Taste for salt and pepper and adjust if necessary.
  3. Enjoy!

NOTE: Can be kept refrigerated in an air tight container for up to 2 weeks in the fridge.

 

Fresh Pasta Dough Recipe

Fresh pasta is very easy to make!  You can have fresh pasta from start to finish in as little as 45 minutes (30 minutes to let the dough rest).

Ingredients:

  • 2 cups of organic all-purpose, unbleached, flour
  • e eggs
  • 1 tbsp of extra virgin olive oil
  • (OPTIONAL) replace the olive oil with 1.5 tbsp of red pepper chimichurri

Instructions:

  1. Put all ingredients in a food processor and pulse until you get a ball of dough.
  2. Remove the dough ball and put on floured surface.
  3. Knead the dough by folding into itself while sprinkling it with flour until the ball no longer sticks to your hands, it’s smooth, and when you push down on it with your finger, it springs back.
  4. Wrap dough ball in plastic wrap, or put it inside of a small Ziploc bag, and store in the refrigerator for 30 minutes to let the gluten relax.
