Easy Pad Thai Noodles

This is a really easy recipe for Pad Thai noodles. I developed this sauce for the western world, where finding Thai ingredients may be difficult for some. Trust me, it may seem unconventional at first, but you’ll love it!

Pad Thai is about flavors and textures – crunchy and soft with a salty, sour and sweet sauce. In this sauce we replace the sugar and tamarind, traditionally used, with tomato ketchup, which has a very similar flavor profile.

Yield: 2 Servings

Ingredients for Pad Thai Noodles:

  • 1/2 lb of rice stick noodles
  • 1 handful of bean sprouts
  • 1/2 onion, sliced
  • 5 scallions, cut in sections
  • 1/2 lb of raw shrimp
  • 2 eggs
  • Vegetable oil

Ingredients for Sauce:

  • 1/2 cup chicken stock
  • 1/2 cup tomato ketchup
  • 3 tbsp fish sauce
  • 2 tbsp low sodium soy sauce
